Equipment

  • LARGE SAUCEPAN

Ingredients
  

  • 3 Tablespoons Olive Oil
  • 1/2 White Onion chopped
  • 2 Celery Stalks sliced
  • 2 Cloves Garlic chopped
  • 8 Cups Water
  • 4 Teaspoons Chicken Bouillon or broth
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1/2 Cabbage sliced and chopped
  • 1 Can Stewed Tomatoes drained and diced
  • 10 Cherry Tomatoes halved
  • 1 Tablespoon Fresh Parsley

Instructions
 

  • Heat the olive oil in a large saucepan over a medium heat.
  • Add the chopped onions, garlic and celery. Stir together and cook for 4-5 minutes, until the onion is softened and transparent.
  • Next pour in the water and chicken bouillon, add the salt and pepper and stir. Bring to a boil.
  • Stir in the chopped cabbage. Simmer for 10 minutes, until the cabbage is softened.
  • Add in the stewed tomatoes, bring to a boil again and simmer for 15-20 minutes, stirring frequently.
  • Scatter the halved cherry tomatoes on the top. Simmer for a further 5 minutes, until the cherry tomatoes are softened.
  • Sprinkle with fresh parsley and serve hot with crusty bread.

Notes

Variations: Healing Cabbage Soup
  • Add chicken or turkey for a meaty dish.
  • Sprinkle in some crushed, crispy bacon.
  • Add more vegetables such as carrots and broccoli.
  • Use beef or vegetable bouillon or stock.
  • Try adding spices such as paprika.
This soup is deliciously good as-is with a wonderful consistency and flavor and blending is just as good.
