Healing Cabbage Soup
Delicious, easy and comforting soup that is incredibly easy to make. This healing cabbage soup is so simple and so yummy, yet can work as a weight loss staple that is good for your health too!

- 3 Tablespoons Olive Oil
- 1/2 White Onion chopped
- 2 Celery Stalks sliced
- 2 Cloves Garlic chopped
- 8 Cups Water
- 4 Teaspoons Chicken Bouillon or broth
- 1 Teaspoon Salt
- 1/2 Teaspoon Black Pepper
- 1/2 Cabbage sliced and chopped
- 1 Can Stewed Tomatoes drained and diced
- 10 Cherry Tomatoes halved
- 1 Tablespoon Fresh Parsley
Heat the olive oil in a large saucepan over a medium heat.
Add the chopped onions, garlic and celery. Stir together and cook for 4-5 minutes, until the onion is softened and transparent.
Next pour in the water and chicken bouillon, add the salt and pepper and stir. Bring to a boil.
Stir in the chopped cabbage. Simmer for 10 minutes, until the cabbage is softened.
Add in the stewed tomatoes, bring to a boil again and simmer for 15-20 minutes, stirring frequently.
Scatter the halved cherry tomatoes on the top. Simmer for a further 5 minutes, until the cherry tomatoes are softened.
Sprinkle with fresh parsley and serve hot with crusty bread.
Variations: Healing Cabbage Soup
- Add chicken or turkey for a meaty dish.
- Sprinkle in some crushed, crispy bacon.
- Add more vegetables such as carrots and broccoli.
- Use beef or vegetable bouillon or stock.
- Try adding spices such as paprika.
This soup is deliciously good as-is with a wonderful consistency and flavor and blending is just as good.
