Ingredients
  

  • 8 oz of Cod
  • 2 Tbsp of Shredded Coconut
  • 2 Tbsp of Almond Flour
  • 1 Tbsp of Olive Oil
  • 1 tsp of Sea Salt
  • 4 Cups of Broccoli Florets or other vegetables

Instructions
 

  • Preheat the oven to 400F/200C, and line a baking sheet with parchment paper.
  • In a small bowl mix the shredded coconut, almond flour, and sea salt.
  • Coat the cod fillets with the olive oil and then toss them in the coconut and almond flour to cover the fillets, then lay them on the baking sheet.
  • Bake them in the oven for 10-12 minutes, until the crust is golden brown.
  • While the cod is baking, steam the broccoli florets (or your favorite vegetables).
