- 8 oz of Cod
- 2 Tbsp of Shredded Coconut
- 2 Tbsp of Almond Flour
- 1 Tbsp of Olive Oil
- 1 tsp of Sea Salt
- 4 Cups of Broccoli Florets or other vegetables
Preheat the oven to 400F/200C, and line a baking sheet with parchment paper.
In a small bowl mix the shredded coconut, almond flour, and sea salt.
Coat the cod fillets with the olive oil and then toss them in the coconut and almond flour to cover the fillets, then lay them on the baking sheet.
Bake them in the oven for 10-12 minutes, until the crust is golden brown.
While the cod is baking, steam the broccoli florets (or your favorite vegetables).
