Ingredients
  

  • 1 Tablespoon Coconut Oil
  • 250 g of Ground Beef
  • 1/2 Cup of Onions finely chopped
  • 1 Clove of Garlic finely chopped
  • 1/2 teaspoon Ground Cumin
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Paprika
  • 1/2 Can of Diced Tomatoes
  • 1 Yellow Bell Pepper diced
  • 2 Cups of Cauliflower Rice
  • 1/2 Cup of Mexican or Cheddar Cheese shredded

Instructions
 

  • Heat the coconut oil in a pan on medium heat.
  • Add the ground beef, and cook for 5-6 minutes until lightly browned.
  • Next, add in the onions and garlic, and cook for a further 3-4 minutes until the onions are softened and the ground beef is browned.
  • Add the cumin, chili powder, and paprika, stir well and allow to cook for 1-2 minutes.
  • Then, add the diced tomatoes, bell pepper, and cauliflower rice and combine everything well. Cook for a further 4-5 minutes until the cauliflower rice is softened.
  • During the last 2 minutes add in the shredded cheese and stir together.
  • Scatter cilantro over the top, and serve with diced fresh avocado or a wedge of lime.
