Ingredients
  

  • 1/4 Cup Crunchy Peanut Butter
  • 1/4 Cup Green Onions finely chopped
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Lemon Juice
  • 1 1/2 Tablespoons Brown Sugar
  • 2 teaspoons Garlic minced
  • 1 teaspoon Ground Coriander
  • 1/8 teaspoon Cayenne Pepper
  • 1 pound Pork Tenderloin cubed
  • 1 Green Bell Pepper cut into 2-inch pieces
  • 1 Red Bell Pepper cut into 2-inch pieces

Instructions
 

  • Mix the peanut butter, green onions, soy sauce, lemon juice, brown sugar, garlic, coriander, and cayenne pepper in a mixing bowl until thoroughly combined. Divide the mixture into 2 bowls.
  • Add the cubed pork to one of the bowls of marinade, and stir until fully coated, then cover the bowl, and place in the refrigerator for 30 minutes to marinate.
  • Remove from the refrigerator and begin to thread the marinated pork, onto the skewers, adding the green bell pepper and red bell pepper in between each layer.
  • Cook on a heated grill (broiler or skillet) for 10-15 minutes, turning every few minutes, until thoroughly cooked.
  • Place the remaining bowl of the marinade in a small saucepan, bring to a boil, and cook on low for 4-5 minutes. Pour into a ramekin for serving.
  • Serve the skewers on a flatbread with salad, and drizzle with the marinade or use it as a dipping sauce.
