Mix the peanut butter, green onions, soy sauce, lemon juice, brown sugar, garlic, coriander, and cayenne pepper in a mixing bowl until thoroughly combined. Divide the mixture into 2 bowls.
Add the cubed pork to one of the bowls of marinade, and stir until fully coated, then cover the bowl, and place in the refrigerator for 30 minutes to marinate.
Remove from the refrigerator and begin to thread the marinated pork, onto the skewers, adding the green bell pepper and red bell pepper in between each layer.
Cook on a heated grill (broiler or skillet) for 10-15 minutes, turning every few minutes, until thoroughly cooked.
Place the remaining bowl of the marinade in a small saucepan, bring to a boil, and cook on low for 4-5 minutes. Pour into a ramekin for serving.
Serve the skewers on a flatbread with salad, and drizzle with the marinade or use it as a dipping sauce.
