Ingredients
  

  • 2 Large Tomatoes diced
  • 1/2 Cup Red Onions chopped
  • 1/4 Avocado diced
  • 1 Green Chili Pepper de-seeded and diced
  • 2 Tablespoons Fresh Parsley chopped
  • 1 Tablespoon Red Wine Vinegar
  • 2 Teaspoons Lime Peel grated
  • 1 Teaspoon Lime Juice
  • 1/4 Teaspoons Ground Cumin

Instructions
 

  • Place the chopped tomatoes, onions, avocado, and chili peppers in a bowl.
  • In a small bowl combine all the remaining ingredients, the red wine vinegar, lime peel, lime juice, and cumin.
  • Pour the liquid over the chopped vegetables and mix together until everything is evenly covered.
  • Leave to stand for 10-15 minutes before serving.
  • Serve with tortilla chips, crackers, crusty bread, or as a topping for fajitas and enchiladas!
