- 1 Cup Almond Flour
- 2 Tbsp Erythritol (or any Sweetener)
- 1 tsp Baking Powder
- Pinch of Sea Salt
- 2 Eggs
- 1/4-1/2 Cup Almond Milk (unsweetened)
- 2 Tbsp Avocado Oil
- 1 tsp Vanilla Extract
Place all the ingredients, into a mixing bowl.
Using a whisk, mix all the ingredients until the mixture forms a smooth batter.
Heat a dry frypan or skillet.
Using a scoop or a tablespoon, place a circle of the batter mixture into the frypan or skillet.
Cook for 1-2 minutes or until it is firm enough to flip over, then using a spatula flip over and cook the other side for a further 1-2 minutes, or until browned to your liking.
Repeat with the remaining batter mixture, then serve with fruit and syrup.
