Preheat the oven to 475F/246C, and grease a baking sheet.
Cut the baked potatoes in half lengthways and scoop out half of the pulp center, leaving 1/4 inch shell. Place the potato shells on a baking sheet.
In a mixing bowl add the vegetable oil, parmesan cheese, garlic powder, paprika, salt, and pepper. Mix all ingredients until fully combined.
Brush the oil mixture over the inside and outside of the potato skins.
Place in the preheated oven and bake for 8-10 minutes until browned and crispy.
Remove from the oven, and divide the shredded cheese into each potato skin (add crumbled bacon if using)
Bake for a further 3-5 minutes until the cheese is melted, top with green onions and a side of sour cream.
