Ingredients
  

  • 3 Tbsp Vegetable Oil
  • 1 Tbsp Parmesan Cheese finely grated
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Paprika
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 1/2 Cups Cheddar Cheese shredded
  • 1/2 Cup Sour Cream
  • 4 Green Onions sliced

Instructions
 

  • Preheat the oven to 475F/246C, and grease a baking sheet.
  • Cut the baked potatoes in half lengthways and scoop out half of the pulp center, leaving 1/4 inch shell. Place the potato shells on a baking sheet.
  • In a mixing bowl add the vegetable oil, parmesan cheese, garlic powder, paprika, salt, and pepper. Mix all ingredients until fully combined.
  • Brush the oil mixture over the inside and outside of the potato skins.
  • Place in the preheated oven and bake for 8-10 minutes until browned and crispy.
  • Remove from the oven, and divide the shredded cheese into each potato skin (add crumbled bacon if using)
  • Bake for a further 3-5 minutes until the cheese is melted, top with green onions and a side of sour cream.
