1 1/2CupsFlour
2CupsCorn
1/2CupCheddar Cheeseshredded
1/3CupChiveschopped
1/2CupMilk
2Eggsbeaten
1tspSalt
1TbspChilli Powderoptional
Instructions
In a large mixing bowl, stir together all the ingredients, flour, corn, cheese, chives, milk, beaten eggs, salt, and chili powder and mix well
Heat the cooking oil on medium heat, in a large saute pan.
Carefully place scoops of the corn batter into the pan of hot oil using a spoon, then evenly spread so they are flat and even. You may have to cook in batches of 3 or 4 at one time, but this depends on how many your pan will hold as well as the size that you decide to make the fritters.
Cook for 2-3 minutes on each sides until golden brown. Repeat this process with the remaining batter.
Sprinkle with finely chopped scallions and serve with sour cream.
