Ingredients
  

  • 1 1/2 Cups Flour
  • 2 Cups Corn
  • 1/2 Cup Cheddar Cheese shredded
  • 1/3 Cup Chives chopped
  • 1/2 Cup Milk
  • 2 Eggs beaten
  • 1 tsp Salt
  • 1 Tbsp Chilli Powder optional

Instructions
 

  • In a large mixing bowl, stir together all the ingredients, flour, corn, cheese, chives, milk, beaten eggs, salt, and chili powder and mix well
  • Heat the cooking oil on medium heat, in a large saute pan.
  • Carefully place scoops of the corn batter into the pan of hot oil using a spoon, then evenly spread so they are flat and even. You may have to cook in batches of 3 or 4 at one time, but this depends on how many your pan will hold as well as the size that you decide to make the fritters.
  • Cook for 2-3 minutes on each sides until golden brown. Repeat this process with the remaining batter.
  • Sprinkle with finely chopped scallions and serve with sour cream.
