HEALTHY CHICKEN DIVAN RECIPE

Ingredients
  

  • 4 Chicken Breasts halved
  • 2 Cans Cream of Chicken Soup broccoli or mushroom
  • 1 teaspoon Lemon Juice
  • 1 Teaspoon Curry Powder
  • 1 Cup American Cheese shredded
  • 5 Cups Broccoli Florets
  • 2 1/2 Cups Mushrooms sliced
  • 1 Cup Mayonnaise
  • 1/2 Cups Breadcrumbs
  • 2 teaspoons Butter melted

Instructions
 

  • Bring some water to a boil and add the chicken breasts, simmer for 8-9 minutes or until tender.
  • In another saucepan, bring some water to a boil and add the broccoli, simmer for 5-6 minutes until softened.
  • Drain the broccoli and arrange the florets on the base of a casserole dish.
  • Place the halved chicken breasts over the broccoli.
  • 5 Next, combine the soup, mayonnaise, curry powder, and lemon juice, and mix thoroughly.
  • Pour the soup mixture over the chicken.
  • Place the breadcrumbs in a mixing bowl, add the melted butter, and mix together
  • Scatter the breadcrumbs evenly over the soup mixture.
  • Follow by scattering the shredded cheese over the top.
  • Add extra shredded cheddar cheese to fully cover the breadcrumbs (optional).
  • Bake at 350 degrees for 20-25 minutes until bubbling and browned.
  • Serve warm, with potatoes, pasta, or rice, and enjoy!

Notes

Variations:
This is a great recipe to use up leftovers too, with loads of options to use different ingredients.
The possibilities are endless!
  • Use leftover rotisserie chicken, cube up some chicken breast and fry it in a skillet, boil some chicken breast, or if you have any leftover chicken use that.
  • Or make a soup base by mixing sour cream with powdered chicken or vegetable stock and adding herbs and mustard.
  • Use cream of chicken soup, cream of broccoli soup, or cream of mushroom soup.
  • Add parmesan, gruyere, or Monterey. Try a sharp cheddar or gruyere a different cheese blend.
  • Add tomato paste and red pepper flakes, garlic, or herbs. Use some jalapenos and serve with a salsa side.
  • Substitute the soup for Alfredo sauce and serve it on pasta, and add more breadcrumb topping to get more crunch.
  • Use any other vegetables: Peas, cauliflower, carrots, or brussel sprouts.
