Zucchini Noodles with Chicken

Ingredients
  

  • 1 Tbsp Curry Powder
  • 2 Tbsp Coconut Milk
  • 1 tsp Salt
  • 1 tsp Ground Ginger
  • 3 oz Zucchini Noodles cooked
  • 3 oz Chicken Breast cooked & shredded
  • 1/2 Red Bell Pepper chopped
  • 2 Scallions chopped
  • 2 Cups Hot Water boiled

Instructions
 

  • Place the curry powder in the mason jar.
  • Add the coconut milk and mix.
  • Next add the salt and ginger, and mix again.
  • Place the drained zucchini noodles in the mason jar and follow with the chicken.
  • Slice your zucchini into thin noodles. (Use a vegetable peeler to create long, thin strips).
  • Boil water in a pan of hot water for 3-5 minutes.
  • Then add the red pepper and top with the scallions.
  • Pour the boiled water into the mason jar, place the lid and gently shake to mix (or use a spatula).
  • Leave to stand for 5 minutes and enjoy.
