Ingredients
  

  • 2 Cans Chickpeas drained & rinsed
  • 1 Cucumber sliced and halved
  • 4 oz Feta Cheese cubed
  • 1 Red Bell Pepper cubed
  • 2 Cups Cherry Tomatoes halved
  • 1/2 Cup Black Olives pitted
  • 1 Red Onion cubed
  • 1 Clove Garlic finely chopped
  • 1/4 Cup Oregano finely chopped
  • 1/4 Cup Parsley finely chopped
  • 1/4 Cup Lemon Juice
  • 1/4 Cup Olive Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions
 

  • In a large mixing bowl, add all the ingredients, Chickpeas, cucumber, feta, bell pepper, tomatoes, olives, onion, garlic, oregano, parsley, lemon juice, olive oil, salt and pepper.
  • Toss the salad to ensure all the ingredients are evenly spread.
  • Serve as a side or enjoy with some crusty bread.
