2 Cans Chickpeas (drained & rinsed)

1 Cucumber (sliced and halved)

4oz Feta Cheese (cubed)

1 Red Bell Pepper (cubed)

2 Cups Cherry Tomatoes (halved)

1/2 Cup Black Olives (pitted)

1 Red Onion (cubed)

1 Clove Garlic (finely chopped)

1/4 Cup Oregano (finely chopped)

1/4 Cup Parsley (finely chopped)

1/4 Cup Lemon Juice

1/4 Cup Olive Oil

1 tsp Salt

1 tsp Black Pepper

INSTRUCTIONS 

1. In a large mixing bowl, add all the ingredients, Chickpeas, cucumber, feta, bell pepper, tomatoes, olives, onion, garlic, oregano, parsley, lemon juice, olive oil, salt and pepper.

2. Toss the salad to ensure all the ingredients are evenly spread.

3. Serve as a side or enjoy with some crusty bread.
