BACON AND EGG MUFFIN CUPS

This easy Bacon and Egg Muffin Cups recipe is great for a weekend breakfast or brunch, amazingly simple to make and so impressive. They are superbly delicious and with only 5 minutes of prep time and 10 minutes in the oven, it doesn’t get any simpler.

A healthy option for all the family but also perfect for a Keto Diet and gluten free too!

This recipe uses thinly sliced bacon or ham, if you want to use thicker slices we would recommend cooking the bacon slightly beforehand.

STORAGE: BACON AND EGG MUFFIN CUPS

FRIDGE: Place in an airtight container and store in the fridge for up to 3-5 days.

FREEZER: These cups don’t freeze particularly well but you can place in an airtight container and store in the freezer for up to 2 months. Thaw thoroughly before reheating.

REHEATING: BACON AND EGG MUFFIN CUPS

OVEN: Place in an ovenproof dish and cover, cook at 350F/180C for 5 minutes

MICROWAVE: Place in a microwave dish and cook on full power for 1-2 minutes.

BACON AND EGG MUFFIN CUPS RECIPE

INGREDIENTS  

1 Tbsp Olive Oil (spray)

9 Eggs 

9 Bacon or Ham Slices

1 Cup Shredded Cheddar Cheese

1/2 Cup Heavy Cream

1/2 Black Pepper

INSTRUCTIONS 

1. Preheat the oven to 400F/200C.

2. Spray each cup in the muffin pan with oil, next line the base of each muffin cup with the bacon/ham slices.

3. Sprinkle shredded cheddar cheese evenly into the base of each cup.

4. Add 1 egg into each cup, then drizzle over with 1 tsp of heavy cream.

5. Sprinkle with black pepper and bake in the preheated oven for 10 minutes, until the eggs are cooked to your preference.
