Zucchini Noodles With Chicken RECIPE
INGREDIENTS
1 Tbsp Curry Powder
2 Tbsp Coconut Milk
1 tsp Salt
1 tsp Ground Ginger
3oz Zucchini Noodles (cooked)
3 oz Chicken Breast (cooked & shredded)
1/2 Red Bell Pepper (chopped)
2 Scallions (chopped)
2 Cups Hot Water (boiled)
INSTRUCTIONS
1. Place the curry powder in the mason jar.
2. Add the coconut milk and mix.
3. Next add the salt and ginger, and mix again.
4. Place the drained zucchini noodles in the mason jar and follow with the chicken.
Slice your zucchini into thin noodles. (Use a vegetable peeler to create long, thin strips).
Boil water in a pan of hot water for 3-5 minutes.
5. Then add the red pepper and top with the scallions.
6. Pour the boiled water into the mason jar, place the lid and gently shake to mix (or use a spatula).
7. Leave to stand for 5 minutes and enjoy.
