Chilled Peach Soup – an Amazing Cold Soup

Chilled Peach Soup is an amazing cold soup, perfectly refreshing and delicious for a hot summer day. If you’ve never thought of fruit soup then you will be pleasantly surprised.

The Schnapps adds just the right peachy sweetness and the spices (cinnamon, nutmeg, and mint) make it taste like a peach cobbler soup!

Garnish with a dollop of plain Greek yogurt and mint leaves, or top with a spoonful of fat-free vanilla yogurt and a few blueberries.

It is delicious as a dessert and even more delicious served with Peach Cheesecake. YUM!

If you want to peel the peaches it is very simple. First, boil a large pot of water then drop in the peaches for a minute or two. Immediately put them in ice water for a few minutes and the skin comes right off, easy!

STORAGE: Chilled Peach Soup

Chilled Peach Soup RECIPE

INGREDIENTS 

1 Cup Dry White Wine

1 Cup Peach Schnapps

1/2 Cup Sugar

1 tsp Fresh Mint (chopped)

1/2 tsp Ground Cinnamon

1/4 tsp Ground Nutmeg

2 Cups Half and Half Cream

10 Fresh Peaches (sliced)


INSTRUCTIONS 

1. In a mixing bowl, add the white wine, peach schnapps, and fresh mint, and stir together.

2. Add the cinnamon, nutmeg, cream, and sugar, and mix well until fully combined.

3. Pour into a large saucepan and add the sliced peaches.

(If you want to peel the peaches it is very simple. First, boil a large pot of water then drop in the peaches for a minute or two. Immediately put them in ice water for a few minutes and the skin comes right off, easy!)

4. Cook on medium heat for 10-15 minutes while stirring until the peaches are softened.

5. Allow to cool and transfer to the blender, blend for 2-3 minutes until smooth.

6. Cover and place in the refrigerator until cool or ready to use.

7. Serve chilled, garnish with a dollop of plain Greek yogurt and mint leaves or top with a spoonful of fat-free vanilla yogurt and a few blueberries.
