DOUBLE CHOCOLATE PROTEIN MUFFINS RECIPE
INGREDIENTS
2 Cups Almond Flour
1 Cup Erythritol (powdered)
1/2 Cup Cocoa Powder
1/4 Cup Collagen Protein Powder
1 & 1/2 tsp Baking Powder
1/4 tsp Sea Salt
1/4 Cup Coconut Oil (melted)
1/2 Cup Almond Milk (unsweetened)
3 Eggs
1/2 tsp Vanilla Extract
1 Cup Dark Chocolate Chips (sugar free)
INSTRUCTIONS
1.Preheat the oven 350F/177C
2. In a mixing bowl, place the almond flour, powdered erythritol, cocoa powder, collagen protein powder and sea salt. Stir all the dry ingredients together.
3. Next pour in the melted coconut oil and almond milk, stir until fully mixed.
4. Add the eggs and vanilla extract, mix in using a whisk.
5. Add 3/4 (save some to sprinkle on top later) of the dark chocolate chips, and fold in using a spatula or spoon.
6. Line a muffin tin with parchment liners.
7. Using a scoop or spoon, place the mixture into each muffin cup, fill almost full leaving a small gap for the muffins to rise.
8. Sprinkle the remaining dark chocolate chips on the top of each muffin cup.
9. Place in the preheated oven for 25 minutes.
