Corn fritters are fried cakes that have a thick batter with chopped vegetables that are fried. They are crispy on the outside and soft on the inside and are incredibly delicious!
Also known as batter cake, pancake, and fried cake, they are simple to make and packed with flavor, making them perfect for any night of the week.
They can be made ahead of time and frozen for later, so you can have a delicious and convenient dinner or lunch option on hand anytime you need it.
Keep all your ingredients cold while making the batter for your fritters. This is because when the batter is cold, the fritters will not absorb as much oil and will keep them light and crispy.
FRIDGE: Place in an airtight container and store in the fridge for up to 3-5 days.
FREEZER: Place in an airtight container and store in the freezer for up to 6 months.
OVEN: Place in an ovenproof dish and cover, cook at 350F/180C for 10-15 minutes
MICROWAVE: Place in a microwave dish and cook on full power for 1 minute.
1 1/2 Cups Flour
2 Cups Corn
1/2 Cup Cheddar Cheese (shredded)
1/3 Cup Chives (chopped)
1/2 Cup Milk
2 Eggs (beaten)
1 tsp Salt
1 Tbsp Chilli Powder (optional)
FOR COOKING
1 Cup Cooking Oil
1. In a large mixing bowl, stir together all the ingredients, flour, corn, cheese, chives, milk, beaten eggs, salt, and chili powder and mix well
2. Heat the cooking oil on medium heat, in a large saute pan.
3. Carefully place scoops of the corn batter into the pan of hot oil using a spoon, then evenly spread so they are flat and even. You may have to cook in batches of 3 or 4 at one time, but this depends on how many your pan will hold as well as the size that you decide to make the fritters.
4. Cook for 2-3 minutes on each sides until golden brown. Repeat this process with the remaining batter.
5. Sprinkle with finely chopped scallions and serve with sour cream.
