CAPRESE SALAD SKEWERS RECIPE WITH PESTO & BACON
INGREDIENTS
16 Cherry Tomatoes (or grape tomatoes)
4 Strips Bacon (cooked & cut in 4)
16 Basil Leaves
16 Mozzarella Balls
1/4 Cup Pesto
2 Tbsp Olive Oil
1/4 tsp Black Pepper
16 Cocktail Picks/Skewers
INSTRUCTIONS
1. Skewer 1 tomato on the cocktail pick add 1 piece of the cooked & cut bacon pieces, next add 1 basil leaf folded in half and finally add the mozzarella ball. Repeat until all 16 cocktail picks are loaded and place in rows on a platter, tray or plate.
2. Place the pesto in a mixing bowl and add the olive oil and whisk until fully mixed.
3. Drizzle the pesto dressing over the loaded skewers on the platter.
4. To finish, garnish with the black pepper and serve.
