2 Large Tomatoes (diced)
1/2 Cup Red Onions (chopped)
1/4 Avocado (diced)
1 Green Chili Pepper (de-seeded and diced)
2 Tablespoons Fresh Parsley (chopped)
1 Tablespoon Red Wine Vinegar
2 Teaspoons Lime Peel (grated)
1 Teaspoon Lime Juice
1/4 Teaspoons Ground Cumin
1. Place the chopped tomatoes, onions, avocado, and chili peppers in a bowl.
2. In a small bowl combine all the remaining ingredients, the red wine vinegar, lime peel, lime juice, and cumin.
3. Pour the liquid over the chopped vegetables and mix together until everything is evenly covered.
4. Leave to stand for 10-15 minutes before serving.
5. Serve with tortilla chips, crackers, crusty bread, or as a topping for fajitas and enchiladas!
