This keto Chicken Cobb Salad is easy to make and so delicious! Packed full of layers of chicken and bacon, with avocado and eggs on a bed of lettuce leaves, it just couldn’t get any tastier. Ready in only 10 minutes of easy prep time.

VARIATIONS: Chicken Cobb Salad

  • Meat: Serve with your favorite beef, turkey, pork, fish, or tofu.
  • Pasta: Try it with macaroni, penne, tagliatelle, fusilli (twirly pasta) or farfalle (bow tie pasta).
  • Seeds: Add in some seeds such as Chia Seeds or Flaxseed for extra healthiness.

Chicken Cobb Salad RECIPE

INGREDIENTS 

2 Cups of Lettuce Leaves  

2 Slices of Cooked Bacon (chopped)

1 Hard Boiled Egg (quartered)

1/2 Cup of Cucumber (chopped)

4 oz of Chicken  (cooked & Sliced

1/2 Avocado (sliced)

1 Tbsp Olive Oil  

Pinch of Salt and Pepper

1/4 Cup Chopped Peanuts (optional)


INSTRUCTIONS 

1. Wash the lettuce leaves and place them in a large salad bowl.

2. Sprinkle the chopped bacon over the lettuce leaves, and place the chopped cucumber over the top.

3. Arrange the slices of chicken, avocado, and boiled egg.

4. Drizzle the olive oil on top and add salt and pepper if desired.

5. Scatter chopped peanuts or macadamia nuts over the top (optional).
