This homemade granola recipe with honey is easy and simple to make, it can be made ahead and stored to use when required. It is perfect for breakfast any day and great for adding to yogurt, waffles, and smoothies.
Granola is a delicious healthy breakfast food and this recipe is made using rolled oats with added nuts and honey.
Serve in a bowl and add your favorite toppings:

FRIDGE: Place the granola in an airtight container and store it for up to 2 weeks.
FREEZER: Place the granola in an airtight container and store in the freezer for up to 6 months.
OVEN: Place the granola cups without any fillings in an ovenproof dish and cover, cook at 350F/180C for 5 minutes
MICROWAVE: Place the granola cups without any fillings in a microwave dish and cook on full power for 1 minute.
3 Cups Rolled Oats
1/2 Cup Almonds (sliced)
1/2 Cup Pecans (halves)
1/2 tsp Sea Salt
1/2 tsp Cinnamon powder
1/2 Cup Coconut Oil (melted)
1/2 Cup Honey
1 tsp Vanilla Extract
3/4 Cup Dried Cranberries
1. Preheat the oven to 350F/180C and line a large baking sheet with parchment paper.
2. In a large mixing bowl, combine the oats, almonds, pecans, sea salt, and cinnamon. Stir to blend.
3. Pour in the coconut oil, honey, and vanilla. Mix well, until all the ingredients are coated.
4. Spread the granola onto the lined baking sheet, and use a large spoon to spread it in an even layer.
5. Bake in the preheated oven for 20-25 minutes until lightly golden, stirring halfway through. The granola will further crisp up as it cools.
(for chunks of clumpy granola, press the stirred granola down with your spatula to create a more even layer).
6. Remove from the oven and allow to cool for 30- 40 minutes.
7. Top with the dried fruit and stir to mix it up.
8. Serve with your favorite toppings or add to your favorite yogurt!
