A great Pork Satay recipe that can be eaten as an appetizer, a main dish, or as a snack. Made with skewered pork but can be changed up for chicken, lamb, or beef, it is grilled or broiled, although it can also be cooked in a skillet or in the oven.

FRIDGE: Place in an airtight container and store for up to 2-3 days.
FREEZER: Place in an airtight container and store in the freezer for up to 3 months.
STOVETOP: Place in a saucepan, and heat on medium heat for 4-5 minutes, stirring frequently.
OVEN: Place in an ovenproof dish and cover, cook at 350F/180C for 10-15 minutes
MICROWAVE: Place in a microwave-safe dish and cook on full power for 1-2 minutes.
1/4 Cup Crunchy Peanut Butter
1/4 Cup Green Onions (finely chopped)
2 Tablespoons Soy Sauce
2 Tablespoons Lemon Juice
1 1/2 Tablespoons Brown Sugar
2 teaspoons Garlic (minced)
1 teaspoon Ground Coriander
1/8 teaspoon Cayenne Pepper
1 pound Pork Tenderloin (cubed)
1 Green Bell Pepper, cut into 2-inch pieces
1 Red Bell Pepper, cut into 2-inch pieces
Skewers
1. Mix the peanut butter, green onions, soy sauce, lemon juice, brown sugar, garlic, coriander, and cayenne pepper in a mixing bowl until thoroughly combined. Divide the mixture into 2 bowls.
2. Add the cubed pork to one of the bowls of marinade, and stir until fully coated, then cover the bowl, and place in the refrigerator for 30 minutes to marinate.
3. Remove from the refrigerator and begin to thread the marinated pork, onto the skewers, adding the green bell pepper and red bell pepper in between each layer.
5. Cook on a heated grill (broiler or skillet) for 10-15 minutes, turning every few minutes, until thoroughly cooked.
6. Place the remaining bowl of the marinade in a small saucepan, bring to a boil, and cook on low for 4-5 minutes. Pour into a ramekin for serving.
7. Serve the skewers on a flatbread with salad, and drizzle with the marinade or use it as a dipping sauce.
