Cod is a light, flakey, mild-flavored fish and the coconut is a nice variation of a typical breaded fish recipe.

VARIATIONS: Coconut Crusted Cod
The list is endless and you could have a different variation for every day of the month! Try some of these in any combination, or even all at once if you’re really hungry.
Meat: Substitute the cod for chicken beef turkey, or pork.
Fish: Use salmon, tuna, bass, or your favorite fish.
Vegetables: Pair with any vegetables to hand such as cauliflower, broccoli, or green beans.
Pasta: Try it with macaroni, penne, tagliatelle, fusilli (twirly pasta) or farfalle (bow tie pasta).
Spice: Add a bit of spice to the crust mix, such as paprika, cumin, turmeric, cinnamon, or ginger.
Seeds: Add some seeds such as Chia Seeds or Flaxseed for extra healthiness.
Nuts: Chopped almonds, macadamia, or peanuts are delicious mixed into the crust mix for extra crunch.
STORAGE: Coconut Crusted Cod
FRIDGE: Place in an airtight container and store for 2-3 days.
FREEZER: Place in an airtight container and store in the freezer for up to 3 months.
REHEATING: Coconut Crusted Cod
STOVETOP: Place in a frying pan, and heat on medium heat for 4-5 minutes on each side.
OVEN: Place in an ovenproof dish and cover, cook at 350F/180C for 10-12 minutes
MICROWAVE: Place in a microwave-safe dish and cook on full power for 1-2 minutes.
Coconut Crusted Cod RECIPE
INGREDIENTS
(2 servings)
8oz of Cod
2 Tbsp of Shredded Coconut
2 Tbsp of Almond Flour
1 Tbsp of Olive Oil
1 tsp of Sea Salt
4 Cups of Broccoli Florets (or other vegetables)
INSTRUCTIONS
1. Preheat the oven to 400F/200C, and line a baking sheet with parchment paper.
2. Mix the shredded coconut, almond flour, and sea salt in a small bowl.
3. Coat the cod fillets with olive oil, toss them in the coconut and almond flour to cover the fillets, and lay them on the baking sheet.
4. Bake them in the oven for 10-12 minutes, until the crust is golden brown.
5. While the cod is baking, steam the broccoli florets (or your favorite vegetables).
