A fresh strawberry salad bursting with flavor, not only is it delicious, but it is also a healthy option too. Strawberries are full of antioxidants and just one serving of strawberries has the same vitamin C as a whole orange.

Also, a strawberry salad is a great way to use up some of the summer produce that is starting to fade away.

VARIATIONS: Strawberry Salad

One of the best things about strawberry salad is that it is a very versatile dish. You can create it in a variety of ways, which means that it can be tailored to your own individual taste. Try some of these in any combination.

  • Berries: Add more berries such as blueberries, raspberries, or blackberries.
  • Fruits: Try sliced banana, apple, grapes, melon, or segments of orange or grapefruit.
  • Vegetables: Mix in cooked asparagus, green beans, or your favorite vegetables.
  • Grains: Add a bit of quinoa or rice for a more filling salad.
  • Seeds: Add in some seeds such as Chia Seeds or Flaxseed for extra healthiness.

Strawberry Salad RECIPE

INGREDIENTS 

For the Strawberry Spinach Salad:

3/4 Cup Pecans

1 1/2 Cups Fresh Baby Spinach

1/2 Cup Fresh Mint Leaves

3 Cups Strawberries (hulled and quartered)

3/4 Cup Feta Cheese (crumbled)

For the Poppy Seed Dressing:

1/4 Cup Balsamic Vinegar

3 Tablespoons Olive Oil

1 1/2 Tablespoons Poppy Seeds

1 1/2 Tablespoons Honey

1/2 teaspoon Dijon Mustard

1/2 teaspoon Coarse Salt

1/4 teaspoon Black Pepper


INSTRUCTIONS 

1. Preheat the oven to 350F/180C.

2. Place the pecans evenly on a baking sheet, and bake for 8 to 10 minutes or until the pecans begin to brown and smell fragrant. Transfer to a cutting board and roughly chop.

3. In a small mixing bowl whisk together all of the dressing ingredients (vinegar, oil, poppy seeds, honey, mustard, salt, and pepper) until fully combined.

3. Next place the spinach in a great big serving bowl and add the strawberries, drizzle with half of the dressing, and toss to coat the leaves.

4. Add the feta and pecans and toss lightly, add more dressing if necessary

5. Serve immediately, with extra dressing on the side.
